Orange, avocado and cashew salad
- 4 oranges
- 2 avocados
- 6 cups spinach
- ½ cup cashews
- 1 lb precooked chicken pieces
- 2 tbsp olive oil
Supreme the orange: with a sharp knife over a bowl, cut off the rind and outer membrane, and slice out the wedges of fruit between inner membranes. Reserve any juice in the bowl.
Peel and pit avocado, then cut into thick slices. Set aside.
In a serving bowl, toss spinach and cashews together. Top with orange segments, avocado and chicken.
Drizzle olive oil and reserved orange juice over salad. Season with salt and pepper to taste. Serve immediately.
