Ingredients
- 8 hard-boiled eggs
- 4 oz ham
- 2 ½ tbsp mayonnaise
- 1 ¼ tsp dijon mustard
- 2 tsp horseradish
- ½ lemon
- ¾ tsp cayenne

Step 1
Cut hard-boiled eggs in half and scoop yolks into a small bowl. Set whites aside on a serving plate.

Mash yolks with a fork. Finely chop ham and add to yolks, then add mayonnaise, mustard, horseradish, 1 tsp lemon juice, cayenne and salt and pepper to taste. Mash all ingredients together until thoroughly combined.

Stuff each egg half with horseradish mixture. Garnish with extra cayenne to taste.

Tip
The fresher your eggs, the harder they'll be to peel: older eggs have more air under the shell, while fresh are more tightly sealed. Make eggs easier to peel by cracking them all over and rolling them on the counter, to get air under the peel. Then, peel under cold water to help release the shell!
