Tropical coconut French toast

  • 4 bananas
  • ½ cup canned coconut milk (lite)
  • 2 tsp vanilla
  • 1 ¾ tsp cinnamon
  • 2 oranges
  • 1 ½ tbsp canola oil
  • 8 slices whole grain bread


  1. Peel banana and add half to a blender along with coconut milk, vanilla and cinnamon. Zest and juice orange; add 8 tbsp juice and 2 tsp zest to the blender. Puree until smooth. Pour mixture into a shallow dish.

  2. Heat canola oil in a medium skillet over medium heat. Dip each piece of bread into coconut milk mixture. Drain excess liquid before placing bread into hot skillet.

  3. Cook each slice 2 to 3 minutes, until just browned on the bottom, turn, and brown the other side, 2 to 3 minutes more.

  4. To enjoy, slice remaining banana and serve on top of french toast.
