Orange-pistachio parfaits with mango drizzle

Ingredients
- 3 cups greek yogurt
- 4 oranges
- ¼ cup pistachios
- 1 mango
- 2 tbsp coconut oil
Steps

Divide greek yogurt evenly between two serving bowls.

Peel and segment oranges; cut each segment in half. Coarsely chop pistachios. Sprinkle both over greek yogurt.

Peel and pit mango. Transfer mango flesh to a blender with coconut oil. Puree until smooth. Drizzle mango puree over pistachios and enjoy!
