Orange-pistachio parfaits with mango drizzle

  • 3 cups greek yogurt
  • 4 oranges
  • ¼ cup pistachios
  • 1 mango
  • 2 tbsp coconut oil


  1. Divide greek yogurt evenly between two serving bowls.

  2. Peel and segment oranges; cut each segment in half. Coarsely chop pistachios. Sprinkle both over greek yogurt.

  3. Peel and pit mango. Transfer mango flesh to a blender with coconut oil. Puree until smooth. Drizzle mango puree over pistachios and enjoy!
