Quick and easy vegetarian black bean soup

  • 1 cup salsa
  • 3 cups canned black beans
  • 4 cups vegetable broth
  • ¾ tsp cumin
  • 1 green onion
  • ¼ cup sour cream
  • 8 oz sweet potato chips


  1. Combine salsa, black beans, broth, and cumin in a blender and blend until smooth. Transfer to a pot and place over medium heat.

  2. Cook soup, stirring occasionally, until hot through, about 5 minutes.

  3. Meanwhile, thinly slice green onion. Once soup is hot, season with salt and pepper to taste and transfer to a bowl: top with green onion and sour cream. Serve with sweet potato chips on the side.
