Quick and easy vegetarian black bean soup
- 1 cup salsa
- 3 cups canned black beans
- 4 cups vegetable broth
- ¾ tsp cumin
- 1 green onion
- ¼ cup sour cream
- 8 oz sweet potato chips
Combine salsa, black beans, broth, and cumin in a blender and blend until smooth. Transfer to a pot and place over medium heat.
Cook soup, stirring occasionally, until hot through, about 5 minutes.
Meanwhile, thinly slice green onion. Once soup is hot, season with salt and pepper to taste and transfer to a bowl: top with green onion and sour cream. Serve with sweet potato chips on the side.
