Quick rice & bean burritos

  • 8 oz frozen vegetables, pepper and onion blend
  • 4 whole grain wrap - 10" sizes
  • 1 lb refried beans
  • 2 ⅔ cups brown rice (pre-cooked)
  • ½ cup salsa
  • ½ cup chopped cilantro


  1. Defrost mixed vegetables according to package instructions and drain well. Lay wrap on a large plate or flat surface.

  2. Spread refried beans in the center of the tortilla and layer rice, mixed vegetables, salsa and cilantro on top. Roll burrito up tightly.

  3. If desired, warm burrito in a skillet over medium heat (3 to 4 minutes, turning occasionally) or in the microwave (30 seconds to 1 minute at high power). Enjoy!
