Italian pasta primavera casserole
- 12 oz penne
- 3 cups tomato pasta sauce
- ½ cup shredded parmesan cheese
- 1 ½ cups shredded mozzarella cheese
- 3 ¼ cups precut mixed vegetables (pre-chopped)
- 3 ½ tbsp fresh basil
Prepare penne according to package instructions.
Meanwhile, preheat oven to 350 degrees F.
In a large bowl, combine tomato sauce, parmesan and 1 cup shredded mozzarella. Stir in cooked penne, precut mixed vegetables (pre-chopped) and a generous pinch of salt. Transfer mixture to a baking dish and sprinkle with remaining ½ oz shredded mozzarella.
Bake uncovered in the oven 25 minutes. Divide onto plates and top with basil.
