Italian pasta primavera casserole

  • 12 oz penne
  • 3 cups tomato pasta sauce
  • ½ cup shredded parmesan cheese
  • 1 ½ cups shredded mozzarella cheese
  • 3 ¼ cups precut mixed vegetables (pre-chopped)
  • 3 ½ tbsp fresh basil


  1. Prepare penne according to package instructions.

  2. Meanwhile, preheat oven to 350 degrees F.

  3. In a large bowl, combine tomato sauce, parmesan and 1 cup shredded mozzarella. Stir in cooked penne, precut mixed vegetables (pre-chopped) and a generous pinch of salt. Transfer mixture to a baking dish and sprinkle with remaining ½ oz shredded mozzarella.

  4. Bake uncovered in the oven 25 minutes. Divide onto plates and top with basil.
