Roasted Italian turkey sausage with tomatoes and peppers
- 12 oz sliced bell peppers
- 1 cup cherry tomatoes
- 4 tomatoes
- 1 ½ tbsp minced garlic
- 1 ½ tbsp olive oil
- 1 ½ lbs italian turkey sausage
Preheat broiler on high, with a rack about 3 inches from the top. Combine bell peppers, cherry tomatoes, tomato (keeping them whole) and garlic in a baking dish and toss with olive oil. Season with salt and pepper.
Use a sharp paring knife to score turkey sausage all over (slicing into the casing and about 1/4-inch deep into the meat, but not slicing through the sausage). Nestle the sausages into vegetable mixture and broil 15 minutes, or until sausage is blistered and cooked through and the tomatoes have burst.
Transfer to plates and enjoy!
