Chopped rainbow salad with multi-greens

Ingredients

  • ½ napa cabbage
  • 6 cups mixed greens
  • 2 cups cherry tomatoes
  • 1 cucumber
  • 2 yellow bell peppers
  • 2 avocados
  • 1 ½ tbsp dill
  • 1 lemon
  • ¼ cup olive oil
  • ¼ cup balsamic vinegar
  • ¾ tsp red pepper flakes

Steps

  1. Core and thinly slice napa cabbage. Add to a salad bowl along with mixed greens and cherry tomatoes.

  2. Thinly slice cucumber. Remove top and seeds from yellow bell pepper; thinly slice. Peel and dice avocado. Combine all together in the bowl.

  3. Coarsely chop dill. De-seed and juice lemon.

  4. In a small bowl, whisk together olive oil, balsamic, red pepper flakes, dill and 2 tbsp lemon juice. Toss dressing with salad and enjoy!
