Red cabbage, sausage and apple salad with gorgonzola

Ingredients

  • 8 oz precooked chicken apple sausage
  • 2 tbsp rice vinegar
  • 1 tbsp apple cider vinegar
  • 2 tsp dijon mustard
  • ¼ cup olive oil
  • 2 apples
  • 1 lemon
  • 1 red cabbage
  • ½ cup dried cherries
  • ½ cup pecans
  • ½ cup blue cheese

Steps

  1. Slice chicken apple sausage. Place skillet over medium heat and cook sausage until heated through, about 6 minutes.

  2. Meanwhile, in a small bowl, whisk together rice vinegar, apple cider vinegar and mustard. Gradually whisk in olive oil. Season with salt and pepper to taste.

  3. Thinly slice apples; in a medium bowl, toss apple with 4 tsp juice from lemon. Thinly slice red cabbage.

  4. In a large bowl, combine apple, red cabbage, dried cherries, pecans, blue cheese and chicken apple sausage. Toss with dressing to taste.
