Eggplant fries with wasabi mayo

  • 2 eggplants
  • 2 tbsp olive oil
  • 2 tsp wasabi powder
  • ¼ cup mayonnaise


  1. Preheat oven to 400 degrees F.

  2. Cut eggplant into rounds, then stack the rounds and cut into French fry-like strips. Place strips onto a baking sheet and drizzle with olive oil. Season lightly with salt and pepper.

  3. Bake 20 to 25 minutes, until browned and crispy. Re-season with salt and pepper, and let cool slightly before removing from pan.

  4. While the fries bake, dissolve wasabi powder in 2 tsp water to create a paste. Let stand 1 minute. Mix with mayonnaise and use for dipping.
