Chewy banana bread granola bars

  • 3 bananas
  • ¼ cup honey
  • 1 tsp vanilla
  • 2 cups rolled oats
  • 2 tbsp flax meal
  • 1 tsp cinnamon
  • ½ tsp salt


  1. Preheat oven to 350 degrees F. Grease an 8x8 baking pan.

  2. In a large mixing bowl, mash banana with a potato masher or the back of a fork. Add honey and vanilla, stirring to combine. Add rolled oats, flax meal, cinnamon and salt. Mix until fully incorporated.

  3. Pour mixture into prepared pan. Bake 20 minutes, until golden and a knife inserted into the center comes out dry.

  4. Let cool 10 minutes, then cut into 8 bars. Store extras in an air-tight container at room temperature for up to 3 days, or freeze for up to 1 month.
