Chewy banana bread granola bars
- 3 bananas
- ¼ cup honey
- 1 tsp vanilla
- 2 cups rolled oats
- 2 tbsp flax meal
- 1 tsp cinnamon
- ½ tsp salt
Preheat oven to 350 degrees F. Grease an 8x8 baking pan.
In a large mixing bowl, mash banana with a potato masher or the back of a fork. Add honey and vanilla, stirring to combine. Add rolled oats, flax meal, cinnamon and salt. Mix until fully incorporated.
Pour mixture into prepared pan. Bake 20 minutes, until golden and a knife inserted into the center comes out dry.
Let cool 10 minutes, then cut into 8 bars. Store extras in an air-tight container at room temperature for up to 3 days, or freeze for up to 1 month.
