Mini ham and broccoli frittatas (make-ahead)

Ingredients

  • 2 tbsp coconut oil
  • 1 cup broccoli
  • ½ red onion
  • 6 oz ham
  • 3 tbsp chives
  • 8 eggs
  • ¼ cup full-fat coconut milk

Steps

  1. Preheat oven to 375 degrees F. Grease a 12-cup muffin tin with coconut oil.

  2. Chop broccoli into bite-size pieces. Dice onion and ham.

  3. Divide ham, broccoli, and onion equally among muffin cups.

  4. Mince chives. In a medium sized bowl, whisk together egg, chives, full-fat coconut milk, and salt and pepper to taste.

  5. Pour egg mixture into each muffin cup. Fill cups almost to the top but not completely. Bake 20 minutes, or until golden and eggs are set.

  6. Let cool 5 minutes, then enjoy 2 muffins per serving or refrigerate in an air-tight container for future snacking.
