Quick Greek salad with cucumber, olives and feta

Ingredients

  • ⅓ cup olive oil
  • ⅓ cup red wine vinegar
  • 2 lemons
  • 1 ¾ tsp dried oregano
  • 2 cucumbers
  • ½ red onion
  • 4 cups lettuce
  • 2 cups cherry tomatoes
  • ½ cup feta
  • ⅓ cup kalamata olives

Steps

  1. In a small bowl, mix olive oil, red wine vinegar , lemon zest & juice, dried oregano, salt and pepper.

  2. Thinly slice cucumber and red onion. Coarsely chop lettuce. Place all in the same bowl.

  3. Halve cherry tomatoes and add to bowl.

  4. Sprinkle feta and olives on top. Add vinaigrette and toss to combine.
