Ingredients
- 2 ½ tbsp olive oil
- 2 ½ tbsp red wine vinegar
- 2 lemons
- 1 ¾ tsp dried oregano
- 2 cucumbers
- ½ red onion
- 8 cups lettuce
- 4 cups cherry tomatoes
- 1 cup feta
- ½ cup kalamata olives

Step 1
In a small bowl, mix olive oil, red wine vinegar , lemon zest & juice, dried oregano, salt and pepper.

Step 2
Thinly slice cucumber and red onion. Coarsely chop lettuce. Place all in the same bowl.

Halve cherry tomatoes and add to bowl.

Sprinkle feta and olives on top. Add vinaigrette and toss to combine.

- ½ cup kalamata olives
Tip
If you're packing this lunch, pack the dressing separately in a small sealed container. You can also pack your salad in a sealed jar, with the dressing at the bottom. Just shake when you're ready for lunch!
