Tofu and vegetable scramble with a bagel
- 14 oz tofu (extra-firm)
- 1 red bell pepper
- 2 tbsp soy sauce
- ¾ tsp ground turmeric
- ¾ tsp curry powder
- 1 tbsp olive oil
- 1 cup spinach
- 4 whole grain bagels
Place tofu between two paper towels and press firmly between two plates (or cutting boards). Place a heavy book on top and let sit 5 min.
Meanwhile, finely dice red bell pepper. In a small bowl, mix together soy sauce, turmeric and curry powder.
Heat skillet over medium-high heat. Add olive oil and red bell pepper and cook until soft.
Crumble tofu and add to pan. Cook 3 min, then add soy sauce mixture and stir.
Fold in spinach and cook, covered, 1 min more.
Transfer scramble to plate and enjoy with bagel on the side or as a sandwich.
