Ingredients
- 1 lb soba
- 2 tbsp soy sauce
- 1 ½ tbsp maple syrup
- 1 ½ tbsp minced garlic
- 2 tsp minced ginger
- 2 tbsp rice vinegar
- 2 ½ tbsp sesame oil
- 2 cups shredded carrot
- 4 cups shredded cabbage
- 4 green onions
- 2 ½ tbsp sesame seeds
- ½ cup fresh cilantro

Step 1
Cook soba according to package instructions. Drain and rinse with cool water.

Meanwhile, in a small bowl, combine soy sauce, maple syrup, garlic, ginger, rice vinegar and sesame oil. Whisk well to blend.

In a large bowl, combine soba, carrot, shredded cabbage and green onion (thinly sliced). Toss with dressing to combine.
