Buckwheat soba noodle and red cabbage salad

Ingredients

  • 1 lb soba
  • 2 tbsp soy sauce
  • 1 ½ tbsp maple syrup
  • 1 ½ tbsp minced garlic
  • 2 tsp minced ginger
  • 2 tbsp rice vinegar
  • 2 ½ tbsp sesame oil
  • 2 cups shredded carrot
  • 4 cups shredded cabbage
  • 4 green onions
  • 2 ½ tbsp sesame seeds
  • ½ cup chopped cilantro

Steps

  1. Cook soba according to package instructions. Drain and rinse with cool water.

  2. Meanwhile, in a small bowl, combine soy sauce, maple syrup, garlic, ginger, rice vinegar and sesame oil. Whisk well to blend.

  3. In a large bowl, combine soba, carrot, shredded cabbage and green onion (thinly sliced). Toss with dressing to combine.

  4. Top with sesame seeds and cilantro for garnish.
