- 2 cups kale
- ⅔ tbsp olive oil
- 1 lemon
- 2 avocados
- 8 slices whole grain bread
- 1 cup radish
- ⅔ tbsp chia seeds
- ¼ tsp cumin

Step 1
Finely shred or slice kale, discarding stems. Place kale in a bowl and add olive oil and 4 tsp lemon juice: massage oil and lemon into kale with hands for 1 minute, until kale is softened.

Scoop avocado into a bowl and mash gently with a fork. Add 1 tsp lemon juice and a pinch of salt and pepper.
