Avocado toast with lemon and kale

  • 2 cups kale
  • ⅔ tbsp olive oil
  • 1 lemon
  • 2 avocados
  • 8 slices whole grain bread
  • 1 cup radish
  • ⅔ tbsp chia seeds
  • ¼ tsp cumin


  1. Finely shred or slice kale, discarding stems. Place kale in a bowl and add olive oil and 4 tsp lemon juice: massage oil and lemon into kale with hands for 1 minute, until kale is softened.

  2. Scoop avocado into a bowl and mash gently with a fork. Add 1 tsp lemon juice and a pinch of salt and pepper.

  3. Toast bread. Thinly slice radish.

  4. Spread avocado on each slice of toast and top with kale and radish slices. Sprinkle with chia seeds, cumin, salt and pepper to taste. Enjoy!
