Coconut chia pudding with spiced pears
- 2 cups full-fat coconut milk
- 2 tbsp almond butter
- 2 tsp vanilla
- ¼ cup maple syrup
- ⅓ cup chia seeds
- 2 pears
- 1 tbsp cinnamon
The night before: Blend together full-fat coconut milk, almond butter, vanilla, and maple syrup in a blender.
Put mixture into a resealable jar and stir in chia seeds. Seal jar and shake. Store in fridge overnight.
At breakfast time: Chop pear and toss with cinnamon in a small bowl.
Enjoy chia pudding topped with pear.
