Coconut chia pudding with spiced pears

  • 1 cup full-fat coconut milk
  • 2 tbsp almond butter
  • 2 tsp vanilla
  • ¼ cup maple syrup
  • ⅓ cup chia seeds
  • 2 pears
  • 1 tbsp cinnamon


  1. The night before: Blend together full-fat coconut milk, almond butter, vanilla, 1 cup water and maple syrup in a blender.

  2. Put mixture into a resealable jar and stir in chia seeds. Seal jar and shake. Store in fridge overnight.

  3. At breakfast time: Chop pear and toss with cinnamon in a small bowl.

  4. Enjoy chia pudding topped with pear.
