Broccoli "fries" with basil hummus
- 2 ¼ cups broccoli
- ¼ cup coconut oil
- ½ cup chopped basil
- 1 ½ tbsp minced garlic
- 1 cup hummus
Slice broccoli lengthwise into ¼” florets, keeping as much of the stem as possible.
Heat a heavy-bottomed skillet over medium-high heat and add coconut oil.
Once oil is glistening, place broccoli into the skillet in a single layer. Cook 2 minutes on each side, turning to brown evenly all the way around.
Meanwhile, whisk together basil, garlic and hummus in a small bowl.
Once 'fries' are done, remove from heat, blot gently with a paper towel, and season well with salt. Enjoy with hummus.
