Broccoli "fries" with basil hummus

  • 2 ¼ cups broccoli
  • ¼ cup coconut oil
  • ½ cup fresh basil
  • 1 ½ tbsp minced garlic
  • 1 cup hummus


  1. Slice broccoli lengthwise into ¼” florets, keeping as much of the stem as possible.

  2. Heat a heavy-bottomed skillet over medium-high heat and add coconut oil.

  3. Once oil is glistening, place broccoli into the skillet in a single layer. Cook 2 minutes on each side, turning to brown evenly all the way around.

  4. Meanwhile, whisk together basil, garlic and hummus in a small bowl.

  5. Once 'fries' are done, remove from heat, blot gently with a paper towel, and season well with salt. Enjoy with hummus.
