Grilled chicken avocado and mango salad

  • 1 lb grilled chicken breast
  • 2 avocados
  • 1 mango
  • ½ red onion
  • 1 butter lettuce head
  • ¼ cup olive oil
  • 2 tbsp apple cider vinegar


  1. Cut chicken, avocado and mango into medium (1/2 inch) dice. Thinly slice red onion. Chop butter lettuce into bite-sized pieces.

  2. Combine chicken, avocado, mango, red onion and butter lettuce in a bowl. Drizzle with olive oil and apple cider vinegar and toss until evenly coated.

  3. Season with salt and pepper to taste. Serve.
