Toasted turmeric pumpkin seeds (from Summer Tomato)

  • 1 cup pumpkin seeds
  • 1 tbsp olive oil
  • ½ tsp ground turmeric
  • ¼ tsp cayenne
  • ¼ tsp salt


  1. Preheat oven to 350 degrees F. Toss pumpkin seeds in a mixing bowl with olive oil, turmeric, cayenne and salt Spread on a baking sheet.

  2. Bake 10 minutes, then stir and bake 5 minutes more, watching to prevent burning.

  3. Enjoy by the handful, or use on top of your favorite salad.
