Spicy chorizo, cheddar and egg scramble
- 8 oz pork chorizo
- 2 tbsp olive oil
- 8 eggs
- 2 cups shredded cheddar cheese
- 1 cup salsa
- ½ cup chopped cilantro
Remove chorizo from casing. Add olive oil to a large skillet over medium-high heat. Add chorizo and cook, breaking up the meat with a wooden spoon, until crispy, about 5 minutes.
Meanwhile, crack eggs into a small bowl and whisk to combine. When chorizo is cooked, add eggs to pan and cook, stirring occasionally, until almost set.
Add shredded cheddar and fold into egg until melted. Season with salt and pepper to taste.
Top with salsa and leaves of cilantro.
