Ingredients
- ½ yellow onion
- 2 tbsp olive oil
- 1 lb ground turkey
- 3 cups shell pasta
- 4 cups vegetable broth
- 4 cups broccoli
- 2 cups canned diced tomatoes
- 2 tbsp minced garlic
- ½ tsp red pepper flakes
- ½ cup shredded parmesan cheese

Step 1
Finely chop onion. In a pot over medium heat, combine olive oil and onion. Cook 3 to 4 minutes, until onion is just softened.

Add ground turkey and cook 5 minutes, breaking turkey into small pieces and stirring often. Add shell pasta, broth and a pinch of salt and pepper: stir well.

Cover pot and cook on low heat 10 minutes, then check pasta for doneness. Pasta should be just tender but still firm (al dente). Cover and cook another 2 minutes if needed.

Meanwhile, chop broccoli into small florets.

Add broccoli, diced tomatoes with their liquid, garlic and red pepper flakes (optional, less if you prefer less heat) to pasta, stirring well. Cover and remove from heat. Let stand 5 minutes, until broccoli is bright green and steamed.
