Farmer's market quesadilla with zucchini and yellow squash

  • 1 red bell pepper
  • 2 zucchinis
  • 2 cups yellow summer squash
  • 1 red onion
  • 1 ½ tbsp olive oil
  • 8 whole grain wrap - 10" sizes
  • 1 ⅓ cups shredded cheddar cheese
  • 1 cup salsa


  1. Dice red bell pepper, zucchini, squash and onion.

  2. Place a large nonstick skillet over medium-high heat. When hot, add olive oil and vegetables and cook 7 min, or until just tender. Season with salt and pepper to taste.

  3. Once vegetables are ready, heat a separate skillet over medium heat. For each person, layer one wrap with some shredded cheddar and some cooked vegetable mixture. Top with second wrap and cook 2 to 3 min on each side, until wrap is crisp.

  4. Cut each quesadilla into 8 triangles and enjoy with salsa.
