Farmer's market quesadilla with zucchini and yellow squash
- 1 red bell pepper
- 2 zucchinis
- 2 cups yellow summer squash
- 1 red onion
- 2 tbsp olive oil
- 8 whole grain wrap - 10" sizes
- 2 cups shredded cheddar cheese
- 1 cup salsa
Dice red bell pepper, zucchini, squash and onion.
Place a large nonstick skillet over medium-high heat. When hot, add olive oil and vegetables and cook 7 min, or until just tender. Season with salt and pepper to taste.
Once vegetables are ready, heat a separate skillet over medium heat. For each person, layer one wrap with some shredded cheddar and some cooked vegetable mixture. Top with second wrap and cook 2 to 3 min on each side, until wrap is crisp.
Cut each quesadilla into 8 triangles and enjoy with salsa.
