Warm mango with tahini coconut sauce and roasted coconut flakes
- ¼ cup coconut flakes
- 2 mangos
- 2 tbsp maple syrup
- 1 tbsp tahini
- ½ cup full-fat coconut milk
- ¾ lime
Preheat oven to 400 degrees F. Place coconut flakes on a baking sheet and toast 8 to 10 minutes, stirring once, until golden brown.
Peel and dice mango into small cubes. place in a small saucepan over medium-low heat. Add maple syrup and cook until mango is warm all the way through.
Meanwhile, mix tahini, full-fat coconut milk and a pinch of salt in a small bowl. Add to mango and cook until warmed through.
Enjoy topped with roasted coconut flakes and a squeeze of lime.
