Fresh papaya salad with coconut and yogurt

  • 1 papaya
  • 1 ⅔ limes
  • 1 ½ tbsp minced ginger
  • 1 ½ tbsp honey
  • 1 cup unsweetened shredded coconut
  • 3 cups greek yogurt


  1. Rinse papaya and slice lengthwise. Scoop out and discard seeds. Peel and dice, then add to a large bowl.

  2. Zest lime and squeeze juice into a small bowl. Grate ginger and add to bowl with honey and a pinch of salt. Whisk together, then pour dressing over papaya. Fold in shredded coconut.

  3. Enjoy with a side of greek yogurt.
