Fresh papaya salad with coconut and yogurt
- 1 papaya
- 1 ⅔ limes
- 1 ½ tbsp minced ginger
- 1 ½ tbsp honey
- 1 cup unsweetened shredded coconut
- 3 cups greek yogurt
Rinse papaya and slice lengthwise. Scoop out and discard seeds. Peel and dice, then add to a large bowl.
Zest lime and squeeze juice into a small bowl. Grate ginger and add to bowl with honey and a pinch of salt. Whisk together, then pour dressing over papaya. Fold in shredded coconut.
Enjoy with a side of greek yogurt.
