Cinnamon banana "soft serve" with walnuts and dates
- 4 bananas
- 4 pitted dates
- ¼ cup walnuts
- 1 ¾ tsp cinnamon
The night before you plan to eat: Peel banana and slice into ½-inch rounds. Freeze in a airtight container until solid. (If frozen longer, place in the refrigerator to thaw slightly; very frozen bananas won't blend easily.)
At snack time: Coarsely chop date and walnuts together. In a food processor or blender, blend frozen banana with cinnamon until smooth and creamy. Sprinkle date and walnuts on top.
