Coconut soaked overnight oats with berries
- 2 cups rolled oats
- 2 cups coconut water
- 2 cups frozen raspberries
- 1 cup frozen blueberries
- 1 cup full-fat coconut milk
The night before you plan to eat: Combine ingredients in a blender or food processor. Blend until mixture is well combined but still has texture, adding more liquid if too thick. Pour into bowls, cover and refrigerate overnight.
Breakfast morning: Remove from fridge and garnish with additional berries if desired.
