Coconut soaked overnight oats with berries

Makes: four servings

  • 2 cups rolled oats
  • 2 cups coconut water
  • 2 cups frozen raspberries
  • 1 cup frozen blueberries
  • 1 cup full-fat coconut milk


  1. The night before you plan to eat: Combine ingredients in a blender or food processor. Blend until mixture is well combined but still has texture, adding more liquid if too thick. Pour into bowls, cover and refrigerate overnight.

  2. Breakfast morning: Remove from fridge and garnish with additional berries if desired.
