Quick white turkey chili

  • ½ yellow onion
  • 4 cups cauliflower
  • 1 yellow bell pepper
  • 2 tbsp coconut oil
  • 2 tsp minced garlic
  • 1 lb ground turkey
  • ¾ tsp dried thyme
  • ¾ tsp garlic powder
  • 1 ½ tbsp dijon mustard
  • ¾ tsp chili powder
  • 2 cups full-fat coconut milk
  • 1 cup shredded cheddar cheese


  1. Peel and dice onion. Finely chop cauliflower. De-seed and dice yellow bell pepper.

  2. In a large pot, heat coconut oil over medium-high heat. Add onion and garlic and cook 2 to 3 minutes, until softened. Add ground turkey and cook until well browned, breaking up with a spatula, about 8 minutes.

  3. Add cauliflower, yellow bell pepper, dried thyme, garlic powder, mustard, chili powder and salt and pepper to taste. Stir well. Add full-fat coconut milk and let simmer until cauliflower is tender, about 8 minutes. (If soup becomes too thick, stir in 2 to 3 tbsp water to reach desired consistency.)

  4. Spoon into bowls and top with shredded cheddar.
