Ingredients
- ½ yellow onion
- 4 cups cauliflower
- 1 yellow bell pepper
- 2 tbsp coconut oil
- 2 tsp minced garlic
- 1 lb ground turkey
- ¾ tsp dried thyme
- ¾ tsp garlic powder
- 1 ½ tbsp dijon mustard
- ¾ tsp chili powder
- 2 cups full-fat coconut milk
- 1 cup shredded cheddar cheese

Step 1
Peel and dice onion. Finely chop cauliflower. De-seed and dice yellow bell pepper.

In a large pot, heat coconut oil over medium-high heat. Add onion and garlic and cook 2 to 3 minutes, until softened. Add ground turkey and cook until well browned, breaking up with a spatula, about 8 minutes.

Add cauliflower, yellow bell pepper, dried thyme, garlic powder, mustard, chili powder and salt and pepper to taste. Stir well. Add full-fat coconut milk and let simmer until cauliflower is tender, about 8 minutes. (If soup becomes too thick, stir in 2 to 3 tbsp water to reach desired consistency.)
