KERF_Author PhotoWhat's your healthy eating philosophy?
I am not one to follow diets or eliminate food groups. Rather, I focus on eating real food. To me, this means lots of fruits, veggies, meats, dairy, legumes, grains and packaged foods with simple ingredient lists.

How did you start cooking?
When I graduated from college I had about 20 pounds to lose and got my first apartment kitchen. My husband (then boyfriend) and I started with simple meals like pasta with pesto sauce and zucchini and gained experience over the years. Now we love to cook and experiment in the kitchen with everything from canned tomato sauce to homemade cheeses.

Tell us the story behind Kath Eats Real Food. How did it start and where has it gone since then?
I started KERF as a food diary to show others that eating real food could be both easy and delicious. It started as a hobby - a space for me to share with family and friends - and I've been shocked with how much it has grown and evolved in the past 7 years from a little blog with 5 readers to my full-time job.

I'm a sucker for ice cream and dark chocolate! And buttercream. And cobblers, pies and crisps. I guess lots of ways! All I care about is that I'm eating high quality treats. I'm not tempted by a grocery store cupcake that has been on the shelf for a week.

You just got home and want to make yourself something quick and comforting. What do you go for?
My favorite quick meal is spaghetti loaded with vegetables!

What meals are currently available on PlateJoy?
