Read the Blog, Eat the Meals: Lexi's Clean Kitchen

You read their recipes. You drool over their photos. Now eat their food! We’re excited to be partnering with several of our favorite food blogs, delivering you some of their most popular meals through PlateJoy.

I always get excited when I find a great gluten-free muffin recipe, or a great dairy-free smoothie. Lexi's Clean Kitchen takes it one step further: Her recipes are not only gluten- and dairy-free, but are also clear of soy and refined sugars. Not only are they allergy-free, they're also largely Paleo-friendly. How does she accomplish it all in one dish? We had to chat with Lexi to find out about her new menu on PlateJoy!

Lexi's Clean KitchenWhat's your healthy eating philosophy?

My healthy eating philosophy is simple: eating clean, whole, seasonal foods that nourish the body and provide energy and tons of health benefits! And of course, listening to your body.

How did you start cooking?

I've always been into cooking, but not always into healthy cooking. When I changed my lifestyle and diet, I began to explore cooking and baking within the restrictions I had. I began sharing my recipes on Instagram a year and a half ago, and my growing following asked for a resource where they could find all of the recipes in one place; my website emerged from there.

How do you treat yourself?

Dark chocolate, or an occasional clean treat (like my brownies, chocolate chip cookies, or caramel turtle cups)!

You just got home and want to make yourself something quick and comforting. What do you go for?

Oooooh that's a tough one! I always go for breakfast foods, like eggs and veggies. If I get home and it's dinner time: a hearty bolognese sauce over zucchini linguine!

What other LCK meals can you find on PlateJoy?

In addition to my favorite bolognese and brownies, you can also find my pumpkin cinnamon muffins; apple pie chia pudding; sweet Thai chicken slaw;  Mexican chicken, sausage and black bean skillet; Moroccan spiced halibut with tomatoes; Stuffed eggplant with harissa chicken and basil; Ginger salmon salad with basil, cucumber and arugula; and more!
