New Way to Use Summer Fruit: Make a 10-Minute Pizza
Fresh fruit is one of our favorite snacks year-round but in summer—when markets are overflowing with peaches, berries and cherries—why not sneak it into every course? Pancakes with berries, sandwiches with fresh strawberry jam and, yes, even fruit on a pizza (other than pineapple).
This peach "pizza" is one of our summer favorites. We love this recipe because it's a quick and healthy meal that celebrates the season (while still satisfying our pizza fix).
1 ripe peach
1 whole wheat pita
3 tbs. ricotta
salt
balsamic vinegar
black pepper
olive oil
fresh basil
Preheat oven to 400 degrees F. Wash, pit and thinly slice peach.
Slice pita lengthwise into two rounds and place on a baking sheet. Spread ricotta around the pita slices, season with salt then top with peach slices. Drizzle with balsamic vinegar.
Bake 6 to 8 minutes, until pita is crisp. Top with cracked black pepper, chopped basil and a drizzle of olive oil.
